Neen's Sweet Chex Mix

This is from Janeen.  I do not know where she got it but it is yummy. I have seen multiple recipes of this on different sites but we like this one.

Neen's Sweet Chex Mix

In a bowl add
1/2 large box chex cereal
1/2 large box golden grahams
2 cups coconut
1 small bag sliced almonds

In a small saucepan put
3/4 cup margarine
1 cup sugar
1 cup white corn syrup
Bring to a boil.  Boil for 2 minutes. Pour over the cereal and mix well.  Spread on a wax lined cookie sheet to cool.  Store in an airtight container.  Enjoy.

Beer Bread

A friend gave us this.  The first time we made it we were camping.  It was really good in the dutch oven although, I had doubled it and next time I won't.

Beer Bread

In a bowl put
3 cups self-rising flour
5 TB sugar
1 12 oz. can of beer
Mix together well.  Place in a greased pan.  Bake at 350 for 40 minutes.

*If you double the recipe use the whole 25 oz. can.  The extra beer keeps the bread moist.

Homemade Slurpees

This is from Josh and Amberly and we love it.  It is a great summer treat.

Homemade Slurpees

Put in the blender
1 pkg Kool-Aid
1 can Sprite
1/3-1/2 cup sugar
2 cups ice
Blend together.  Add more ice as needed.  Enjoy.

Gum Drop Fruit Leather

My mother got this recipe from a friend Betty Arrington.  It is a staple in our summer.  I make as much as I possibly can and save it in the freezer.  It never lasts long.  Use whatever fruit and jello you would like.  We like peaches, apricots, pears best with orange, strawberry jello.

Gum-Drop Fruit Leather

Put in a medium heavy pan
5 cups pureed fruit
1 cup flour
mix together over low heat.  Stir occasionally until slightly thickened-the color will go a couple shades darker.

Then add to the pot
1 small box jello-complementary to the fruit
1/2 cup sugar-optional
Stir well.  Spread on 2 cookie sheets lined with aluminum foil and sprayed with cooking spray.
Put in a HOT car parked in the sun for 8-12 hours, Peel off and turn over then return to car for another 8-12 hours.

*I have used the oven instead of my car and set it on the lowest temperature.  It takes 3-5 hours per side.  Watch it close.  Different fruits take more/less time.

Yummy Hummus

I like hummus.  I like simple hummus.  I've made it for years. I always used tahini in my recipes, but then I came upon this recipe.  There are lots of different hummus recipes that are delicious, the reason I love this one is because it is easy peasy.  Throw everything in and blend, then eat.  The original recipe called for 1/2 c. oil, I cut it down and add in water instead.  Also, I add what I have on hand, sometimes substituting garlic powder or onion powder for the garlic or green onions. It always tastes good.

Yummy Hummus

In a blender put
one can garbanzo beans
add 1/4 cup water
1/4 cup oil
2 TB parsley or 1 1/2 TB dried
2 TB lemon juice
1 whole green onion
2 garlic cloves
1/4 tsp salt and pepper or to taste
Sometimes I add 2-3 TB salsa.  It's good.

Blend all together.

I also always have Stacy's Pita Chips on hand.  In my opinion they are the best with hummus.

Granola

You'll turn into a horse..is what my husband said to me once because, well, I like oats.  Alot.  I like oatmeal for breakfast.  I like oatmeal cookies.  I like granola.  I love granola.  It seems like I can toss in whatever nuts, dried fruit, seeds, it all tastes good together.  Eat it alone, with yogurt, or with milk.

So, here are some granola base recipe's I use.  You can add or leave out pretty much anything.  Less sugars and fats will make your oats stick together less.  More will make it clump.  Make it how you like it.

Granola

Mix together in a large bowl
6-7 cups rolled oats (quick oats works fine too)

2-3 cups rice crispy cereal
1 cup coconut
1/3 cup sesame seeds
1/3 cup sunflower seeds
1-2 cups chopped or sliced nuts
Stir together

In a seperate small bowl put
1/2 cup oil
2 tsp vanilla
1/3 cup honey
Stir together and pour over oat mixture.  Mix together well.

Spread on a cookie sheet.  Bake at 350* for 45 minutes, stirring every 10-12 minutes.  Let cool.

Add
1-2 cups raisins or craisins
Stir together then put in an airtight container.

EAT IT UP!!
