Dutch Puff Pancakes

My sister-in-law Amber first told me about this recipe when I asked her what some of her favorite foods were.  I had made things similar to this before but this is a winner.  My kids love this for breakfast.  It's light and easy and fast. I put it in the oven and then tell the kids they have 30 minutes to get ready for the day.  They like to race the clock so if you have a hard time getting your kids up and moving, try this.

Dutch Puff Pancakes

Put 1/4 cup butter in a 9x13 baking pan and set it in the oven.  Turn the oven on to 400 degrees.

In a bowl, Whisk together
1 cup milk
1 cup flour

Add
6 eggs
1/2 tsp. salt
Whisk to incorporate.

When oven is preheated and butter is melted pour the batter in the pan (it is usually ready by the time I have the batter ready.)  Bake 20 minutes.  Turn oven down to 350 degrees and bake 5-10 minutes more, until golden.

For our family of 6, we eat the whole delicious thing.

*I have lately been using the blender, I put all the ingredients in (except the butter melting in the pan.) Then blend on high for a minute or so till incorporated.  Then pour in the 9x13 pan and bake.
