Mom's Chicken Pot Pie

This spells childhood for me.  It was one of our favorites growing up and it is now one of my kids favorites.  It makes a 9x13 pan but if your family is small it can be split in 2 glass containers.  Freeze one and bake one.  I don't put the crust topping on if I am freezing it.  I make that fresh after the container from the freezer has thawed.

Chicken Pot Pie

In a large pot add
1 14 oz can chicken broth
2 cups chopped potatoes
1 16 oz package frozen mixed vegetables
Cook over medium heat 10-15 minutes until veggies are tender.

Add to the pot
2 cans cream of chicken soup
4 cups chopped chicken
1/4 tsp pepper
Stir together then pour in a 9x13 pan.

Crust

In a small bowl put
1 cup flour
1 tsp baking powder
1/2 tsp salt
1 cup milk
1/2 cup melted margerine
mix well, it will be thin. Pour crust over veggie/chicken mixture.  Bake in oven at 350 for 55-65 minutes.  Crust will be a golden brown when it is done.
